Split the pelvic bone, and spread the chest cavity with a board to cool the inside. I think hanging head up allows for better drainage, with less meat being exposed to fecal, and digestive material. JMHO

Schonye's right...your taxidermist wants them "head up" also...keeps a lot of the blood out of the cape & head...
