My limited knowledge of these cool cars is that they are worlds apart in desirability and market value between the two model years. I believe it has to do with the level of involvement by Shelby on the ‘67 models vs. the ‘68s.

Midway in 1968 Ford launched the Cobra Jet 428 in 1968 Shelbys and changed the side stripe from GT500 to KR500 which stood for King of the Road.
