Interesting conversation! It would seem drag racing is a bit behind other on-track motorsports in this regard.

For "High Performance Driver's Education" events and time trials, the companies I linked above will happily ensure your vehicle at an agreed and guaranteed value. Most offer either 10% or 15% deductible plans and you can purchase per day, weekend, or season.

For some quick math, a $45,000 guaranteed value for two days of HPDE cost ~$300. If you aren't familiar with HPDE, think road course driving where you are only limited by your skills. You're on track with other cars, but are not racing. Any passing is coordinated.

I would expect a day of drag racing to be less, but that's based on it being less seat time, less variables, etc. I don't know if an insurance company would evaluate it that way.
