you should have continuity - so the signal from the engine sensor goes to the gauge. Do you have a wiring diagram for the car - it should show you the wire path from the engine sensor thru the harness and its connectors to the gauge point of contact. Without continuity in the wire - the gauge will never register the temp.

Also - if its a new harness - (i'm just guessing here), but are the harnesses ordered for specific type gauges? First order of business is check for continuity from the point of the engine sensor thru the fuse block to the gauge connection point.
