I had my bodyshop building floor polished when I built it back in 1980. That was before I knew about the epoxy floors that they have today. I must say that it is not a bad choice. Oil will just wipe up and it is easy to wash and sweepup anything.
I think the adition of some color would be a good choice. Just be sure that they are using a higher grade (4500lb) of concrete or it will have too coarse of a finish. At least you won't have to worry about it peeling off. For those of you that don't understand what we are talking about if you have ever paid any attention to the floor in hospitals or other public buildings that is high polished concrete. Pantera
