insurance on project cars??

I own a few cars that are long term projects...(I have a few others that I'm working on that are first in line)...it may be a few years until I start some of them(optimism

...Some are all apart, but they are real cars and at this point worth too much to not insure... The last time I checked my current company would not insure them. Any help??? Thanks
