Default Restoration Steps Advice?

I've been offered a really cool '67 Z project car that I think I am going to buy (I know it would be cheaper to buy an already restored car, but this car is my favorite color and very, very well optioned). So, not having a lot of spare time or room, I need to come up with a plan that will allow me to at least do much of the assembly work with my 6 year old son and I'd like some advice. My thoughts at this point are to disassemble the car and send all of the major components out to various rebuilders while the body is at the body shop. Then I would restore the sub frame and install the motor in place, then take that and the rear axle to the body shop once the paint was done so they could do the final panel fit etc. Then bring the car home to finish it off. Does this make sense or is there a better way? Thanks in advance, Mark.
