Jeff...
I've been through this a few times and have learned it's safest to let the conversion be the first time you run the films..
Old tapes sometimes loose their color after they've been run past the good old projector bulbs...even though it's held well for many passes in earlier years!.
Also aged films can become crispy and break easily so again the first running is your best chance to get the most converted before having to splice and risk loosing some magical footage..
Although tempting to watch first especially before trusting them to a complete stranger for conversion, I learned the hard way and now limit previews to still action eyeball views only..
