As for the axles, go bigger!! If you consider that your trailer is going to be between 3500 and 4000# and your car is 3500 to 4000#-- 7000# axles will not cut the mustard. I have my H&H 24' v-nose and I have a lot of room (Some of you will even get a chuckle out of what I have in the nose of mine). It is a heavy built trailer, but I have a heavy car and the mileage difference vs. wind drag will be miniscule. When I was researching mine, I found that H&H had the most standard equipment and extras built in and I found mine on dealer inventory for the price range that you are looking for. I have been very happy with it, the only thing I wish for is a more stylish tow rig, but I guess the ol' tow beast is a good fit for me!!!
