My personal opinion is that it's not that the factory purposely had different shades as much as there were either inconsistencies in mixing(guy mixing didn't get it quite right, or didn't care) or they changed paint vendors as GM did from time to time. I also think the black tended to bleach out in time. Mine were more charcoal than black.

Couldn't agree more. As with most other things on these cars, we should have learned to avoid two words: 'ALWAYS' and 'NEVER'. When you include the 'Human Factor' in any process, you WILL have inconsistencies.
Still, we've all failed to answer Sully's original question;..... WHICH PAINT IS CORRECT/BEST?
