Go to Mama's Fish House outside Paia for the sunset. Best local fish on the island (I suggest the Opakapaka if they have any) and great location with a little private beach. If you're going to get anything moving after 25 years, this is the place...
A lot closer than the haul to Lahaina, too, so you could take a taxi from Wailea. I always go 2 or 3 times when I'm on Maui. You can even go for an early dinner before you catch your horrible overnight flight back to the mainland.
