I don't doubt your analysis at all regarding the hood replacement, at 21k miles judging by current condition it isn't a stretch to assume that the car would have had an after market hood back in 68. Does the rad support look like it ever had hood pins in the inner set of holes which are already in the rad support?

If I were getting a car from my grandfather's dealership, and it were a new 68 SS 396 and I'm already dropping a L88 in it then obviously I'm in the know... so I know what Yenko's and Nickey's advertisements had on their cars at the time... The stinger hood.

No signs of hood pins and certainly the original radiator support. All looks virgin!
