What may not be as widely known is that they were built in the GM Assembly Research Center (aka GMARC) which was on the northeast corner of the property of Chevrolet Flint Assembly - rather than the assembly plant itself.

The building was used for prototype assembly and assembly line mockups. Many of us from the truck plant would do short stints at GMARC either for research experience or in support of new model launch.

While the building stood for many years, sadly it was recently torn down and turned into a parking lot.

What was changed, besides the bumper ?? I know the fenders where EC only, but they had the same, basic shape.

What is the story with the red GTX with no accent stripe? Was it just left off after restoration or an option aberration?

As I pointed out, it should be there so it was left off during the restoration. The 68 GTX was one of the few Chrysler muscle cars that did not offer a stripes delete.
